when i was given (from a very enthusiastic lady on free cycle) my lancaster rose i was also given a sample of rose jelly. rose anything had never occurred to me before.
since then i've never had enough roses to make any. these roses bloom for two weeks and the blooms last one day. but they are and smell beautiful.
to make rose jelly you are supposed to collect the petals, a whole batch in one day, before they fade on the flower and make the jelly that day.
i didn't have enough roses for that so i had to collect mine over the week. the only difference i think is that my result was a little lighter in taste.
i went online to find a recipe and when i came across a recipe from oxford england i jumped at it.
only they must use 'jelly' and 'syrup' interchangeably.
hers was the only recipe that didn't call for pectin (which i didn't have on hand and i didn't feel like running to the store. i never feel like running to the store).
so i got a beautiful batch of rose syrup.
who wants to come over with some vanilla ice cream?
i've been doing my best to spray my rose with neem oil weekly in hopes of preventing mildew.
hoping for rose hips and still debating planting a clematis in it to add some summer color.
hoping for a big crop next year that i can can into jelly and syrup. yum.
